Low Carb Sheet Pan Meal

This low carb sheet pan meal has been one of my favorites lately! It’s so delicious and satisfying. Perfect for a quick and healthy weeknight meal. Hope you enjoy it as much as I do!

Ingredients:

1 lb of ground turkey

4-6 zucchini

1 jar of salsa (use 3/4 of the jar)

1/2 cup of water

2 tbsp of olive oil

2 limes

s&p

monterey cheese

avocado, cilantro- optional

Instructions:

1.) Preheat oven to 400 degrees. Line baking sheet with parchment paper for easy clean up.

2.) Wash zucchini under cold water and lay dry. Cut sides off and then cube into bite size pieces.

3.) Place zucchini on the baking sheet and spread the pieces out. Drizzle 2 tablespoons of olive oil and sprinkle a pinch of salt over the zucchini. Mix well.

4.) For the meat, use a skillet and turn heat on medium high. Place meat into the pan. Season the meat with salt and pepper. Mix well. Let the meat cook all the way through before adding the salsa. It will take about 10 minutes.

5.) Add salsa, 1/2 cup of water, and squeeze 1/2 a lime into the meat. Let it simmer. Once the meat mixture has completely thickened, turn off the heat and poor the meat over the zucchini.

6.) Sprinkle 1-2 cups of cheese over the top. Pop it into the oven for about 25-30 minutes until the cheese is golden and the ground turkey has browned and crisped up a little. The crispy pieces are my fave!

The crispy pieces are so good!

7.) Add avocado, cilantro, lime juice, whatever sounds delicious to you!
