Easy Street Tacos
These tacos are my take on more of an authentic street taco that I’ve had in Mexico a few times. I love the simplicity and freshness of these tacos. I make these at least once a week and is definitely one of my husband’s favorites! This is a great quick weekday meal (mommy approved.) Let me know if you try it! Ingredients:
1 lb of ground turkey
1 1/2 limes
1/2 cup of diced onions for garnish (Vidalia Onions are BEST-sweet and mild)
handful of cilantro (optional-My FAVORITE ingredient ever)
12 count street tacos flour tortillas (I use the brand Mission)
1 avocado
salt + pepper (season to your liking)
1/4 tsp McCormick mexican taco truck seasoning (I use this all the time to season my meat)
Instructions:
1.Prep taco toppings. Dice up onion. Wash, dry, and roughly chop a handful of cilantro. Slice avocado.
2. Add ground turkey to the skillet. Turn to medium heat. I don’t add any cooking spray or oil to the pan for this recipe. Add salt, pepper, and mexican taco seasoning all over the meat. Squeeze 1 whole lime into the pan and stir.
3. While the meat is cooking, start on flash frying the tortillas. In another skillet add 1 tablespoon of olive oil and turn heat to medium-low. Once the olive oil is warm, add one tortilla to the skillet. Flip tortilla when it turns golden. This should take about a minute or so. Once tortilla is golden brown and slightly crispy on both sides, place tortilla on a plate and repeat.
4. Once meat is cooked through and has become slightly crispy on the edges, turn off heat and set aside.
5. Assemble tacos. Grab a warm tortilla, add ground turkey, diced onion, cilantro, avocado, and squeeze the leftover lime all over.
